The process used to manufacture gelatin must meet rigorous standards set forth by the Food and Drug Administration in the US and other international regulatory bodies. All US based gelatin manufacturers are known to have very stringent quality control programs in place to safeguard the product. Recent scientific studies have shown that gelatin produced from bovine sources is completely safe for human consumption.

What tests are performed on gelatin?
Typically, gelatin is tested for physical properties such as gel strength, viscosity, pH, moisture, color and clarity, for chemical properties such as metals, ash and for microbiological testing such as total plate count, Salmonella, E-Coli and total Coliform at a minimum. Additional testing may be required based on the intended use of the product.

Gelatin does carry the approval of both Jewish and Islamic dietary organizations, although their requirements do differ. Not all Jewish Rabbinical or Islamic agencies will grant approval.
